Lemon Sponge Pie with Oreo Cookie Crust - Tv Food and Drink

This is my first month participating in the Burwell General Store Recipe Swap.? Burwell General Store is a fantastic food blog run by my new friend Christianna who I recently met while working on Beat the Chefs for Game Show Network. Though we were on the same show, we actually have only been in the presence of one another a handful of times. ?Nevertheless, as is often the case when two foodies with extroverted personalities run into one another, it was admiration at first sight.

Once a month Christianna sends to all the Burwell swapping participants a recipe from? The Second Ford Treasury of Favorite Recipes From Famous Eating Places,?compiled in 1954. ?Participants are asked to re-create the recipe and put their own spin on it in the process. ?This month it was Lemon Sponge Pie, as presented by the Old Court House Tea Room in New Castle, Delaware.

As I am of the type to duly investigate a subject before diving in (see my post on Heidi Bohay and the NuWave oven), I pulled the old Google off the shelf and learned what I could about the Tea House?s history before deciding on my ?in? for changing up the recipe. ?Here?s what I learned:

There?s great debate on how old the New Castle Court House actually is, though a 1952 article from Wilmington?s The Sunday Star confirms that the Delaware state constitution was adopted there in the 1780s. The accompanying Tea Room, however, didn?t open its doors until 1926, when it began luring in with food and drink the Delaware passengers lining up to board the ferry to New Jersey.

A quick call to the court house informed me that the tea room disappeared in the early 1950s. According to the court house supervisor/museum curator, its fate was sealed in April 1945 when the Delaware State Highway Department authorized construction of a bridge which would connect New Castle to Pennsville, New Jersey, thus eliminating the need for the ferry. ?No ferry meant no line of people outside the tea room, and no line of people meant lots of Oolong and lemon sponge cake left untouched in the kitchen. On August 15, 1951, The Del Memorial Bridge officially opened? the final nail in the coffin for the birthplace of this month?s recipe.

Here?s something else:?On July 2, 1938, a 10 year old Shirley Temple?lunched at the Old Court House Tea Room?with her parents, business manager, and friends. Shirley had a chicken sandwhich, a piece of cheese, and a chocolate milkshake! Over 300 people turned out to greet Shirley on Delaware Street up on her exit. ?No word on whether she took the ferry to Jersey.

So I decided to take my cue for twisting up this month?s?recipe from Miss Temple?s visit to the Tea room. ?I have yet to read anywhere that lemon sponge pie pairs well with chicken or cheese, so I zeroed in on the chocolate, adding an Oreo crust for the bottom and a chocolate shell for the top. ?I won?t say it made for the most attractive pictures as no matter how delicately I pierced the shell on top it immediately cracked into chocolate shards each time. ?But the flavor combination more than made up for what this rich, citrusy dessert lacked in camera flair.

You can check out my recipe, and the rest of the Burwell interpretations below.

Lemon Sponge Pie

For the pie:

  • 2 Tbsp butter
  • 1 cup sugar
  • 3 eggs, separated
  • 2 Tbsp flour
  • 2 cups milk
  • Juice of 3 lemons
  • Grated rind of one lemon

For The Crust:

  • 2 1/2 cups Oreo Cookies (or chocolate wafers or chocolate graham crackers)
  • 1/4 cup sugar
  • 3/4 stick of butter (6 tablespoons)

For the Chocolate Topping:

  • 5 ounces 72% cacao chocolate
  • 3 tablespoons unsalted butter
  • 1 tablespoon dark corn syrup

Make the crust: ?Pulse the Oreos (or wafer or graham crackers) in a food processor until fine and granular. ?You can also put them in a closed plastic bag and crush with a spoon until you reach the same consistency. ?Next, melt the butter in the microwave. ?Combine the melted butter with the sugar and granulated chocolate particles (if you?re going with Oreos, the quarter cup of sugar is ? used guessed it ? totally necessary! ;) ). ?Press ingredients into 9-inch buttered pie pan, making sure to cover all sides.?Bake for 10 minutes at 325?F and remove. ?Let cool.

For the pie: ?Cream butter and blend with sugar, egg yolks, flour, milk, lemon juice and rind. ?Beat egg whites separately and fold into mixture. ?Pour into pie crust and bake in oven at?350?F ?for approximately 45 minutes.

To make the chocolate shell topping:?Combine chocolate and butter in a medium microwave-safe bowl. Microwave on high for 30 seconds and then stir, repeat, heating in 15 second increments until butter is just melted and smooth. Stir in corn syrup. Set mixture aside until it is only slightly warm to touch.

Pour chocolate mixture over cooled pie and spread to completely cover the top of the pie. Refrigerate overnight or at least four hours to allow pie filling to set completely and chocolate top to harden. Store covered.

5 Common Reasons for Unsuccessful Travel Insurance Claims ...

If you ever had your travel insurance claim declined, then you probably are wondering whether you should have taken the insurance cover in the first place. But as it is said, we should always learn from our mistakes. You need to understand some of the common reasons why your claim could be denied. Most people make travel insurance claims for medical reasons. Studies indicate that the second common claim is based on holiday cancellations followed by travel delay, loss of luggage and missed flights. Travelers facing the aforementioned dilemmas take consolation in travel insurance.

But some holiday makers get a rude shock when their claims are denied. However, it is important to understand that taking holiday insurance does not automatically mean any resultant claim must be honored. There are some reasons why your claim may be denied. Understanding them well would put you in a safe position. The following are some 5 reasons why a claim may be declined.
1. Undisclosed known medical condition
As mentioned, medical reasons top the list of travel insurance claims. Insurers always require that you disclose any pre-existing medical conditions that you have as you take travel insurance. Failure to do so means that any claim related to the undisclosed condition will not be honored by the travel insurer. It is therefore important to make such disclosures as you take the insurance. It is better to pay more for the insurance than having to bear all the medical costs and lose on the insurance amount you paid.
2. Purchasing inadequate cover
When buying travel insurance, it is important to read through the fine print and understand the extent of the cover. Always consider all possible eventualities during travel and make sure they are included in the cover you buy. Again, extended coverage may come at a higher price than insuring for just one situation but it is eventually worth it. Consider the top most possible claims and insure for all of them.
3. Insufficient evidence
For your travel insurer to honor your claim, you must produce all possible evidence for the claim. The evidence must also be credible otherwise the claim may be denied. If for example you lose luggage, you must produce a police report of the loss and also sufficient evidence that the lost luggage was yours. This is especially important when you travel abroad.
4. Being intoxicated when incident occurs
Travel insurers may also refuse to honor your claim if the incident in question happens when you are intoxicated with alcohol or other similar drugs. You must therefore maintain sobriety while travelling so as to be able to look after yourself and your property well. Therefore, if you plan to go partying while on travel with the possibility of taking alcohol, you must be very careful to ensure no incident happens that may compromise your insurance claims.
5. Fighting
If an incident from which you are making a claim is as a result of a fight, your travel insurer may not be willing to pay. Mostly, it is assumed that most fights result from people being intoxicated with drugs or alcohol. Therefore, if a claim results from being involved in a fight, you must prove beyond reasonable doubt that you were not intoxicated and that you fought purely for self defense.

    By Us Weekly

Straight from a JoBro's mouth! Day after Us Weekly reported that Nick Jonas?was a frontrunner to fill one of the two vacant seats at the judges' table of?"American Idol,"?the singer confirmed the possibility -- and his unabashed enthusiasm! -- via Twitter on Saturday.

Photos from Us: 'Idol' judges then and now

"The rumors are true ? I am being considered to be a judge on American Idol," Jonas, 19, wrote to his 4.6 million followers. "And it would be a dream come true if it happens. #nickonidol."

Insiders told Us last Monday that, in the wake of the departures of Steven Tyler and Jennifer Lopez -- plus the rumored transition of judge Randy Jackson to a mentoring role -- both Jonas plus rapper/producer Pharrell Williams were contenders to join the panel. Mariah Carey was confirmed as a new judge July 20, with sources telling Us she'll earn a whopping $18 million a year.

Photos from Us: Most shocking 'Idol' eliminations ever

What makes Jonas a perfect fit? "('American Idol' producers) think he can help bring that younger demo to the show," a source told Us.

39-year-old Williams (who has produced hit records for Britney Spears, Justin Timberlake and Gwen Stefani), meanwhile, is currently negotiating his contract. "Everything is looking good," a source said.

A rep for FOX had no comment on Monday about Jonas and Williams.

Top finance gurus make annual pilgrimage to Grand Lake Stream ...

GRAND LAKE STREAM, Maine ? This little plantation of 109 people in Washington County is known mostly for the great fishing, hunting and other activities it offers to the flocks of outdoorsmen who travel here every year.

But if a recent tradition continues, it also will be the go-to destination for vacationing economists and finance industry insiders, some of whom have gathered at Leen?s Lodge on the shores of West Grand Lake every year for the past two decades.

David Kotok, chairman and chief information officer of Cumberland Advisors in Sarasota, Fla., has been traveling to Grand Lake Stream for 20 years. He began bringing fellow economists along shortly after, and the event has grown ever since. This year, about 50 economists, financial advisers, analysts, hedge fund managers and bankers from around the world arrived with Kotok for the four- to five-day excursion.

They were joined by Gov. Paul LePage and a slew of reporters and news crews from national media outlets, including Bloomberg, National Public Radio, the Wall Street Journal and Dow Jones News. The journalists punctuated the would-be vacation with interviews and news segments shot lakeside.

Kotok said the retreat is a time for the top minds in economics and financial markets to get together to candidly talk shop, debate and discuss the top issues of the day in a place of serene beauty.

On Friday, that meant the July jobs numbers from the U.S. Department of Labor, which showed the unemployment rate unexpectedly rising to 8.3 percent (a loss of about 195,000 jobs), while businesses ramped up hiring to create 163,000 more jobs ? far more than economists had predicted.

The economists on hand Friday said it?s dangerous to try to glean too much information from the seemingly contradictory trends in job creation and unemployment claims.

?Any month?s data is a mixture,? Kotok said. ?There?s great danger in presuming a trend, but it was stronger than people expected. The stock market obviously celebrated.?

Martin Barnes, chief economist for BCA Research in Montreal, said economic data are sufficiently varied that there is evidence to back up bullish or pessimistic predictions.

?Economists will tell you the numbers mean recovery, but for a lot of people it doesn?t feel like it,? he said, referring to the steady unemployment rate hovering around 8 percent. ?It?s still tough out there.?

For the first time, Camp Kotok welcomed Maine?s governor to Leen?s Lodge for dinner. Perhaps because LePage was their guest, those in attendance were hesitant to offer specific opinions on the governor?s plan to hold off on issuing voter-approved bonds until 2014 in an attempt to pay down Maine?s debt. LePage has come under criticism from some lawmakers and towns who say his refusal to borrow money is hurting their recoveries.

Said Kotok: ?All other things equal, of course paying down debt is desirable. So one could argue that?s a sound policy.?

John Mousseau is managing director of Kotok?s Cumberland Advisors. He said that even if paying down debt is always a good plan, it makes sense that some individual municipalities take umbrage with LePage?s across-the-board bond freeze.

?All politics are local, and local people want to make local decisions,? he said. ?There?s a rationale to [LePage?s stance], but what?s good for Kennebunkport may not be good for Lewiston.?

One municipality that?s not hurting, at least this month, is Grand Lake Stream. The annual finance summit at Leen?s Lodge is a boon for the small town.

One guide on retainer for the finance gurus was Mark Gray of Bangor. He estimated that Kotok?s yearly excursion brings in about $200,000 between lodge fees, food, excursions and guide pay.

?This is a big deal, dollars-and-cents wise,? he said. ?It?s a big shot in the arm to the local economy.?

Charles Driza, owner of Leen?s Lodge, said Camp Kotok is the most important event of his year, from a business standpoint.

?It sort of stretches our capacity. David literally fills every bed we?ve got,? Driza said.

?It?s a big buzz around here,? said Deb Cochran, an employee at Pine Tree Store, a trading post a few miles from the lodge. ?It brings attention to Grand Lake Stream. If you?re not a fisherman, we?re kind of out of the way. So it?s some good attention.?

According to a local guide, Charles ?Kim? Vose, Kotok is all too happy to help. He recalled a conversation he had with Kotok last year that stuck with him.

?Last year, I asked David why he comes back here every year,? he said. ?He told me, ?Because you guys treat us like [expletive]. You make us gut fish, we get eaten by bugs, and you never, ever ask us how much money we make.??

Kotok said that even though the event gets more attention every year, it still feels like a vacation.

?They keep liking it,? he said of his comrades. ?They come back every year.?

Cranial Drilling Device puts a hole in skulls, not brains

The Cranial Drilling Device puts a hole in skulls, not brains

If you told us on Monday that we'd be capping our week off by checking out an innovative cranial drill, we likely would have just stared at you funny. But here were are and here it is, a device referred to, quite straightforwardly, as the Cranial Drilling Device with Retracting Drill Bit After Skull Penetration. The drill was designed by a team of researchers at Harvard in order to address a major shortcoming with manual drills. Such devices require neurosurgical training in order to know precisely when to stop so as to not damage underlying brain tissue. In certain instances, such as emergency rooms and the backs of ambulances, medical practitioners may require a cranial drill in order to perform procedures such as the insertion of pressure monitors, with nary a neurosurgeon to be found. The Harvard team has concocted a drill that automatically retracts back into its protective casing, as soon as it's finished drilling through the skull, using a bi-stable mechanism that is active as the drill spins.

After the break, team member Conor Walsh explains the technology is a manner that, thankfully, is not quite brain surgery.
